In Japanese, furui (篩) is the sieve, and to pass something through it, furui ni kakeru, means to select only what survives the finest test. It is the quiet first step of every perfect bowl, and the one most often skipped.
Matcha is milled so finely that it clings to itself, forming tiny clumps no whisk can fully undo. Ten seconds through the Furui changes everything: a fine stainless steel mesh that breaks the powder back into cloud, so your whisk meets silk instead of stones, and your foam builds fine, tight and creamy.
The dark-stained wooden handle is shaped to sit naturally in the hand and carries the era mark burnt into the grain, with a loop for hanging it beside your bowl and whisk. Rested across the rim of a chawan, it turns sifting from a chore into part of the ritual.

Rest the Furui across your bowl. Add 3g of matcha to the mesh with your chashaku, then press the powder through gently, in small circles, and watch it fall like green snow. Lift away, pour your water, and whisk.

Tap the mesh clean after each use and wipe with a dry cloth. If the mesh needs more, rinse it briefly with warm water and dry it immediately. Keep the wooden handle away from soaking water and dishwashers, and let the Furui dry completely before it goes back beside your tools. Cared for this way, the wood deepens and the mesh stays true.
